Rice Kugel

8 oz. (1 1/3 cups) white rice
2 oz. (8 Tablespoons) margarine or butter melted
4 oz. (5/8 cup) brown sugar
4 oz. (1 cup) sultanas or white raisins
1 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon grated lemon rind
2 eggs

Boil the rice in salted water until just tender. Drain and rinse in cold

water. Mix the rice and the other ingredients together. Place in a well
greased pie dish- 2 pint (5 cups) size, Bake in oven for 1 hour at 350
degrees.

Nice change from the pasta variety and the kids like this more in my
home.
